Nuovo launched in late 2023, but the story began much earlier. At 22, Christian Tufenkjian built his first wood-fired oven in his parents’ backyard. What started as small experiments with dough and fire quickly turned into an obsession with craft.
That passion grew from backyard nights with friends to a hand-built oven inside a food truck—marking the start of Nuovo Wood Fired Pizza. From the beginning, the mission was simple: bring true Neapolitan-style pizza, to the Central Valley.
Nuovo has always been about more than pizza. Each step has been a way of learning, refining, and preparing for what’s ahead. We’re proud of where we are, but we know this is only the beginning. Fresno is where our story is being written, and the best chapters are still to come.
