Origins

Story

While finishing at Fresno State University, Owner Christian Tufenkjian began an interest in creating Neapolitan style pizza.
He started by building a wood fired oven at his parents backyard and began experimenting with dough and ingredients. Launching Nuovo late 2023, Christian started the business as a food truck and is now one of Fresno's hidden pizza gems.

We use import Italian flour and cold ferment our dough before baking it in our roaring 900 degree wood fired oven. This allows us to produce depth of flavor and enhanced texture into our dough creating unique flavor experiences that you wont find anywhere else in the valley.

Each pizza is crafted with our

home made dough, quality ingredients,

and authentic artisanal techniques.
We use imported Italian flour and cold

ferment our dough before baking it in

our roaring 900 degree

wood fired oven.

This allows us to produce depth of
